Chewy Protein Bars


Chewy Protein Bars 



Have you ever thought....man, I would love to have a quick snack? Of course you have! When it comes to protein bars, there are so many on the market, and also they can be pretty expensive. Here is recipe that I think you will love, and these may be very well better than your store bought brands. In my next batch, I will use walnuts and raisins for an added touch. You are more than welcome to tweak it as you see fit. Enjoy!

Ingredients:
2 cups quick oats
½ cup Naturade Vanilla VeganSmart Protein Powder (or other vegan protein powder)
2 Tbsp. ground flax
1 tsp. cinnamon
¼ tsp. salt
¼ cup almond butter (I used Nutella)
¼ cup honey, or brown rice syrup if vegan
½ cup unsweetened vanilla almond milk
1 tsp. vanilla extract
⅓ cup mini chocolate chips (dairy-free if vegan)

Instructions:

Preheat oven to 350F and prepare an 8x8 baking pan by spraying it with cooking spray. Set aside.In a large mixing bowl, combine oats, protein powder, flax, cinnamon, and salt. Set aside.In a medium-sized mixing bowl, combine almond butter, honey, almond milk, and vanilla. Mix until fully combined. Pour wet mix into dry mix and stir until fully incorporated. Fold in chocolate chips.Pour into prepared baking pan. Using a spatula or your hands, spread the mixture evenly in the pan, pressing down firmly.Bake for 18-20 minutes, until edges begin to turn golden brown.Remove from oven and let cool in pan for 20 minutes before cutting into bars.

Fabulous Goodwill Finds For Not A Lot of Money




You can look really cute without having to pay ugly prices. All clothing below were purchased at the Goodwill on either Sunday or Wednesday, which is $.99 days here in Tennessee. I really cannot think of another way to find great pieces on a very strict budget. The shoes were either bought at the Goodwill, online, or at Plato's Closet. 





Found this cute Forever 21 blouse at the Goodwill for $.99. Pants were half off, so I spent $2.50 on them, and the pink tank came from Wal-Mart for $1.68!





So, this is my fave blue jean jack right now, which is by Old Navy (XS) and the dress is by Daisy Fuentes...and yes, it was also $.99 at Goodwill. 




This last outfit was also acquired at the Goodwill, while the Guess boots were purchased at Plato's Closet for $20.00! The Gap blue jean blouse (S) and Gap black mini skirt are definite staples in my closet. These pieces can go with just about anything.

Dressing Fab on a Budget

Have you ever thought about taking everything out of your closet and starting all over. I have....many times. But, I have found out that I can revisit those items in my closet a new way. Here are a few ideas for you!

 
Leopard print top (it's actually a dress), Khaki skirt with brown belt

 
Blue Ann Taylor LOFT dress with Old Navy jean jacket accessorized by a scarf

                Ann Taylor LOFT orange cardigan with Faded Glory black Tank, and long print skirt

Everything here minus the orange cardigan, I was able to snag from the Goodwill. Most items were either half off or $.99. Having fun with the clothes that you have is the bottom line.

Easy Egg and Cheese Cupcake Recipe

I love eggs! Ok, that is all. LOL, no seriously, I do love eggs and this recipe is so simple and delicious, you will love eggs too!




Ingredients:

 

1 egg, Large Egg -         

2 tbsp(s), Hot Pepper Blend Shredded Cheese

1/4 cup(s), Kraft Habanero Shredded Cheese              

1/8 cup, Unsweetened Almond Milk

A pinch of black pepper, crushed red pepper, and garlic powder for taste.              

 

 

1. Preheat oven to 375 degrees F.

 

2. In a small bowl,  whisk eggs and almond milk.

 

3. Measure 1/4 cup of the mixture into your cupcake molds.

 

4. Add 1/8 cup of the Kraft Habanero Shredded cheese to each cup, then add 1 tbsp. of the Kroger Hot Peppered Shredded cheese to each cup.

 

5. Sprinkle your seasonings on top, and place in oven for about 15-20 minutes.

 

6.  Enjoy!

Today I would like to find balance in the midst of my stress and being overwhelmed with life itself. There are so many things going on that I really just want to focus on the workouts for the week and my eating. I am learning that my body will push as long as my mind is right. I have to continue to fight through this program because it will be so worth it in the end. I am happy that I came across Kayla Itsines workouts! Push yourself!

Fitness Goals for the Rest of the Year...Yikes!

So it's August....

Ok guys...it is mid-August and the end of the year is quickly approaching. Have you decided what you are going to do with the rest of 2015? If not, today may be a good time to plan for the last four months of the year. 

My plan for the rest of the year is to continue to work on my fitness goals, get more toned, get group fitness certified, and incorporate new foods into my diet. I hope that by the end of the year all will happen. 

So, what have I been up to since I last posted.....Beach Body Guide by Kayla Itsines...that is what I have been up to these days. I am currently in week 2 day 4 of the program, and it has been going well. I will have to say that I did feel like dying a few times, but then I took a deep breath and continued fighting. I am learning so much about my body, my stamina, and targeting muscles on my body that I had been neglecting for some time now. I am loving the subtle changes in my body, and I am understanding that I can do anything that I put my mind to now.

Product Review of the Six Star Pro Nutrition Instant Protein Smoothie

So, I rarely review products, but when I do...I post them to You tube. :) In this video, I review Six Star Pro Nutrition--Instant Protein Smoothie from the makers of Muscle Tech. I really enjoyed this product a lot. The fact that it is a vegetarian/plant based option over the whey protein products is a definite plus for me as I am vegetarian. Also, this product retails for $10.00 at your local Wal-Mart.

You will need to make sure that you are blending this really well as it can get a little grainy, but other than that I really liked what this product had to offer. Working Out!

You really do have to start somewhere. I remember this was my first attempt at getting some actual help with working out. I decided after having surgery, that I would look into getting a personal trainer. I am so glad that I did. She really took the time out to show me several different exercises that I still use in my workouts today. I am so glad that I took the first step in improving my health physically.

This workout really showed how strong I was and also challenged my breathing capabilities. As with any workout, make sure that you check with your doctor first to see if these moves are safe for you to do.

A Little About Me


A Little About Me


Hi! My name is TaKesha, but to friends and family, I go by Nikki. I am a mother of four children, a daughter of a great mother, a sister to a wonderful yet eccentric brother, lover of a king, vegetarian, and a thrifting queen!

A few years ago, I decided to change my life by undergoing Gastric Bypass Surgery after being overweight my entire childhood, and most of my adult life. That was the best decision I could have ever made for not only me, but for my family. Today, I am over 100lbs down, and I have a new outlook on life. I am more energetic, confident, and found out what loving yourself can truly mean.



Now, I want to give back by helping others find joy in exercise, eating right, and loving themselves. Through this page, I hope you will find helpful workout tips, food options, how to be a sassy thrifter, and encouraging words so that you may move forward in reaching your goals of a healthier life.
